Instructions

  1. Cut bacon into 1-inch pieces and coarsely chop the onion.

  2. Sauté bacon in a large Dutch oven until cooked but not crisp; remove bacon to drain, leaving about 2 tablespoons of drippings.

  3. Add onion to the drippings and cook over medium heat for 4 to 5 minutes until tender and lightly browned, stirring frequently.

  4. Stir in cabbage and chicken broth; bring to a boil over high heat.

  5. Cover, reduce heat to low, and simmer for about 15 minutes until cabbage is tender.

  6. If needed, add more broth and continue simmering for 5 to 10 minutes until cooked through.

  7. Add the cooked bacon pieces, salt, and pepper; stir until heated through and adjust seasoning before serving.
