Instructions

  1. Prepare the chimichurri sauce by whisking parsley, cilantro, olive oil, lime juice, garlic, 1 teaspoon salt, and red pepper flakes; process for a finer texture if desired.

  2. Season both sides of the steak generously with salt and pepper.

  3. Heat a cast iron skillet on high, add 1 tablespoon butter, then sear the steak for 3 minutes without moving it.

  4. Flip the steak, add another tablespoon of butter, and crack two eggs into the pan; season the eggs with salt and pepper.

  5. Cook the steak and eggs for 3 more minutes for medium rare steak and set whites with jiggly yolks.

  6. Let the steak rest for a few minutes before slicing, then top with chimichurri sauce and serve.
