Stamppot With Curly Kale and Rookworst (Boerenkoolstamppot)

Instructions

  1. Start boiling salted water with peeled, 1-inch cut potatoes and bay leaves for 20 minutes, while warming milk in a separate pot.

  2. Drain cooked potatoes, discard bay leaves, then mash with warm milk, 2 tablespoons butter, nutmeg, salt, and pepper.

  3. Melt 1 tablespoon butter in a frying pan; sauté chopped shallots for 2 minutes until translucent.

  4. Add trimmed, thinly sliced kale and water, season with salt and pepper, and cook for 10 minutes until tender.

  5. Mix the cooked kale into the mashed potatoes.

  6. Transfer to a serving dish, top with warm smoked sausage slices, and serve hot with mustard or gravy.
