Split Pea Spinach Patties

A flavorful fried snack, these split pea and spinach patties are inspired by Indian Vada and West Indian Phulourie.

Instructions

  1. Rinse and drain split peas, then puree them with garlic and pepper in a food processor until fine.

  2. In a large bowl, combine flour, baking powder, cornstarch, and cumin or garam masala.

  3. Add the pureed pea mixture and water to the flour mixture, stirring well.

  4. Fold in spinach, cilantro, and salt; mix thoroughly. Cover and let rest for 1 hour.

  5. Shape the mixture into 1/3- to 1/2-inch thick disks, about golf ball size, by hand.

  6. Heat oil over medium heat and fry patties in batches for 4-5 minutes per side until browned.

  7. Drain on paper towels and serve warm.
