Spinach Rice Pilaf

Instructions

  1. Finely chop the onion, mince the garlic, and clean, dry, and ribbon-cut the spinach.

  2. In a medium pot over medium-high heat, melt butter, then cook chopped onion and salt until soft, about 3 minutes.

  3. Stir in minced garlic for 1 minute until fragrant. Add spinach and cook, stirring, until wilted and liquid has evaporated, about 4 minutes.

  4. Stir in rice, then broth. Bring to a boil, optionally add dill, then cover, reduce heat to low, and cook for 15 minutes.

  5. Remove from heat and let sit, covered, for 5 minutes.

  6. Remove cover, fluff with a fork, optionally stir in pepper, and serve warm.
