Spinach Parmesan Quiche

Preheat the oven to 375 F and spray a 9-inch pie plate. Line the pie plate with the tortilla.

Heat a nonstick skillet over medium-high heat, spray with cooking spray, and cook onions for 3-4 minutes until tender.

Add spinach to the skillet and cook until wilted, stirring continuously.

In a large bowl, whisk eggs, egg whites, mozzarella, Parmesan, milk, salt, and pepper until well combined.

Stir the cooked spinach and onion mixture into the egg mixture.

Pour the egg mixture into the tortilla shell. Bake for 35-40 minutes until set and golden brown.

Remove from oven, cool for a few minutes, then slice and serve.
