Spinach Noodle Kugel

Instructions

  1. Preheat the oven to 350F (180C) and oil a 9x13x2-inch baking dish.

  2. Boil water in a large pot, cook noodles for 5 to 6 minutes, then drain, rinse, and place in a large bowl.

  3. Wash and destem spinach, then cook it in a saucepan with a small amount of water for 8 to 10 minutes until tender. Drain well, chop, and add to the noodles.

  4. Heat oil in a large skillet, sauté chopped onions until golden for 7 to 10 minutes, then add to the noodle and spinach mixture and mix well.

  5. Add eggs, oil, and salt to the mixture while stirring, then mix thoroughly. Pour into the prepared baking dish.

  6. Bake for 35 to 45 minutes, or until the kugel is firm, browned on top, and a tester comes out clean.
