Instructions

  1. Preheat the oven to 450 F.

  2. Cook bacon in a cast-iron skillet until crispy, then remove, drain, and reserve 2 tablespoons of fat; crumble the cooled bacon.

  3. Heat the reserved bacon fat in the skillet, then sauté diced onion for 2 to 3 minutes until translucent.

  4. Turn off heat, add spinach, and stir until wilted.

  5. Beat eggs until frothy, then mix in milk and salt.

  6. Pour the egg mixture into the skillet over the onion and spinach, then stir in bacon.

  7. Cook on medium heat for approximately 5 minutes until the eggs begin to set.

  8. Sprinkle with grated cheese, then transfer the skillet to the oven and bake for 10 to 15 minutes until fully cooked.
