Spinach, Feta, and Mushroom Pie (Dairy)

Instructions

  1. Preheat the oven to 400 F.

  2. For the crust, whisk flour, salt, and baking powder. Gradually add olive oil and milk, mixing until a dough forms. Knead lightly, then press into a 9-inch pie plate.

  3. For the filling, heat 1 tablespoon olive oil in a skillet over medium-high heat. Sauté garlic for 30 seconds, then add mushrooms and cook for 5 minutes until liquid evaporates. Stir in spinach and cook for 3-5 minutes. Remove from heat.

  4. In a large bowl, whisk eggs and milk. Slowly incorporate the warm vegetable mixture, stirring constantly. Whisk in nutmeg and flour until smooth, then fold in crumbled feta.

  5. Pour the spinach and feta mixture into the prepared crust. Bake for 40 to 45 minutes, until the pie is firm and golden.

  6. Allow the pie to rest for 5 minutes before slicing and serving.
