Spinach and Feta Stuffed Chicken Thighs

Instructions

  1. Preheat the oven to 400 F and prepare a baking sheet with oil or foil.

  2. Melt butter in a skillet over medium heat, sauté onion for 2 minutes until tender.

  3. Add spinach, salt, and pepper to the skillet; cook until most moisture evaporates, about 4 minutes.

  4. Stir in red pepper flakes (if desired) and cream; cook for 3 minutes until blended.

  5. Mix in feta, then cool the mixture.

  6. Carefully loosen the skin from each chicken thigh and stuff 2 tablespoons of the spinach mixture underneath.

  7. Brush the chicken skin with olive oil and season with salt and pepper.

  8. Roast for 45 minutes, or until the chicken reaches an internal temperature of 165 F. Serve hot.
