Spinach and Egg-White Frittata

Instructions

  1. Preheat olive oil in a 10-inch nonstick pan over medium heat.

  2. Whisk egg whites in a bowl until frothy, then combine with cherry tomatoes, spinach, broccoli, garlic, 2 tbsp basil, Parmesan, salt, and pepper.

  3. Pour the egg mixture into the pan and cook for 3 to 4 minutes until the edges begin to set.

  4. Loosen the frittata with a spatula, flip, and cook for an additional 3 to 4 minutes until thoroughly set.

  5. Transfer to a plate, sprinkle with the remaining basil, slice into wedges, and serve warm or at room temperature with sour cream.
