Instructions

  1. Preheat the oven to 400 F and lightly grease a small baking sheet.

  2. Trim the cauliflower by removing leaves and the hard base.

  3. Whisk olive oil, lemon zest, juice, cumin, garlic powder, coriander, salt, and pepper in a bowl to create the marinade.

  4. Apply the marinade evenly over the cauliflower head.

  5. Roast the cauliflower on the baking sheet for 30 to 40 minutes, until dry and lightly browned.

  6. Cool the roasted cauliflower for 10 minutes, then cut into wedges and serve warm, topped with grated Parmesan.
