Instructions

  1. Prepare sushi rice as directed, incorporating about 1 teaspoon of seasoned rice wine vinegar per cup to ensure stickiness.

  2. Spray two small bowls with nonstick spray, then firmly pack about 1/4 pound of sushi rice into each, wrap, and refrigerate for at least 2 hours.

  3. Chop ahi tuna into small chunks and combine in a bowl with kewpie mayo, Sriracha, sweet chili oil, sesame oil, and soy sauce; stir well.

  4. Remove one rice bun half from the bowl, top with avocado and the spicy tuna mixture, then drizzle with Sriracha, kewpie mayo, and eel sauce.

  5. Finish by topping with cilantro and the second rice bun half, then sprinkle with crispy fried garlic.
