Instructions

  1. Soak hominy in water overnight or for at least 8 hours.

  2. Drain hominy, place in a medium pot, cover with 2 to 3 inches of water, and bring to a boil.

  3. Reduce heat and simmer hominy for 2 hours, adding hot water as needed to keep it covered.

  4. Drain hominy and transfer to a large pot; add tripe, pig's feet, onion, oregano, garlic, and peppercorns.

  5. Cover ingredients with 2 to 3 inches of water, bring to a boil, then reduce to low heat, cover, and simmer for 2 hours, stirring occasionally.

  6. Add chilies and cook for 1 additional hour.

  7. Stir before serving; garnish with cilantro, limes, chopped onions, and optional accompaniments like bolillos, tortillas, or Mexican table sauce.
