Preheat the oven to 400 F (200 C).

Heat oil in a large frying pan, cook chopped onion for 5 minutes until soft. Add soy sauce, lemon juice, garlic, and chili sauce; cook for 2 more minutes. Remove from heat and cool the mixture on a plate.

Combine sausage meat, cooled onion mixture, and 2 eggs in a large bowl; mix thoroughly.

On a floured surface, roll out half the pastry into an 8x10-inch rectangle and cut into two strips. Repeat with remaining pastry. Refrigerate pastry for 10 minutes.

Form the sausage mixture into 4 long sausages matching pastry strip length. Place each sausage onto the center of a pastry strip. Beat the third egg and brush pastry edges, then fold pastry over the filling to form 2 long rolls. Brush the top surface with egg.

Cut rolls into 1.5-inch lengths. Place on a greased baking sheet and bake for 20 minutes, or until golden brown.

Cool sausage rolls on a cooling rack; ensure complete cooling if packing for lunch or picnic.
