Instructions

  1. Preheat the oven to 220 C (425 F / Gas 7).

  2. Wash and dry the pumpkin or squash, then carefully cut it into wedges or slices.

  3. Arrange the pumpkin pieces in a single layer on a baking tray; use multiple trays if necessary to prevent overlapping.

  4. Season generously with sea salt and black pepper; then sprinkle with mace, paprika (optional), and thyme.

  5. Drizzle with oil and toss the pumpkin pieces to ensure they are fully coated.

  6. Bake for 30 to 40 minutes, or until the skin slightly blisters and the flesh is tender when pierced.

  7. Remove from the oven and allow to cool slightly before serving. The skin can be removed if not edible, or the pumpkin can be cooled completely for other recipes or pureeing.
