Spicy Potatoes, Cabbage, and Carrots

An easy side dish features potatoes, cabbage, and carrots cooked in a flavorful, mildly spicy blend of ginger, turmeric, and pepper.

Instructions

  1. Prepare all vegetables: finely chop the onion, smash garlic cloves, core and chop cabbage, and chop potatoes and carrots into bite-sized pieces.

  2. Heat butter or oil in a pan over medium-high heat, add onion and salt, and cook for 1 minute. Add garlic, reduce heat to medium, and continue cooking until onions are translucent, about 5 minutes.

  3. Stir in ginger, turmeric, and pepper for 1 minute until fragrant.

  4. Add chopped cabbage, stir, cover, and cook over medium-low heat for 3 minutes until it begins to wilt. Stir, cover, and cook for another 5 minutes until fully wilted.

  5. Add potatoes, carrots, and 2 cups of water. Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes until vegetables are tender. If excess liquid remains, remove the lid and boil off moisture. Season with additional salt if desired and serve.
