Instructions

  1. Start boiling a large pot of water. Separate garlic bulbs into cloves.

  2. Cook garlic cloves in boiling water for 30 seconds. Drain and rinse with cold water; peel cloves.

  3. Pack peeled cloves and optional chiles into a 1-pint jar.

  4. Combine vinegar, salt, and sugar in a bowl; stir until dissolved.

  5. Pour vinegar mixture over garlic cloves to cover them completely.

  6. Cover the jar and refrigerate for at least one month before use. Store chilled for up to a year.
