Instructions

  1. Start a boiling water bath for canning.

  2. Wash asparagus, snap off woody ends, and trim spears to no longer than 6 inches.

  3. Slice onion into slivers, smash garlic, and prepare chile peppers.

  4. Combine vinegar, water, sugar or honey, salt, and spices in a pot; bring to a boil, then simmer for 10 minutes.

  5. Divide onion, peppers, and garlic between 2 clean quart-sized canning jars.

  6. Pack asparagus spears tightly into each jar, tip-end facing up.

  7. Pour hot brine over asparagus, ensuring spears are covered with 1/2 inch headspace.

  8. Seal jars with lids and process in the boiling water bath for 20 minutes.

  9. Wait at least one week for flavors to develop before tasting.
