Spicy Kimchi Stew (Kimchi Jjigae or Kimchi Chigae)
A spicy kimchi stew, a beloved Korean winter dish, pairs well with white rice to temper its heat.

Instructions

Heat 1/2 tablespoon sesame oil in a soup pot over medium-high heat, then sauté the beef for a few minutes.

Add kimchi and stir-fry for 5 minutes.

Stir in the remaining oil, onion, garlic, gochujang, gochugaru, and soy sauce. Pour in the water, bring to a boil, then reduce heat to a simmer.

Simmer for 10 minutes, then add the tofu.

Continue simmering for 10 to 20 minutes, adding scallions at the end.

Serve immediately, optionally with steamed white rice.
