Instructions

  1. Wash and peel the daikon, then remove its leafy green top.

  2. Slice the daikon into 2-inch-long pieces, then cut these into thick lengthwise slices.

  3. Combine sugar and vinegar for the marinade; gently heat until the sugar dissolves, then allow the mixture to cool completely.

  4. Stir salt, dried dashi powder, sake, and optional dried red chile peppers into the cooled marinade.

  5. Place the sliced daikon in a resealable container, pour the marinade over it, seal, and marinate at room temperature for one day.
