Spicy Ground Beef and Pinto Bean Chili

Instructions

  1. In a large Dutch oven, cook onions in oil over medium heat until golden, about 5 minutes.

  2. Stir in garlic, minced chile peppers, and cumin; cook for 2 minutes.

  3. Add chili powder and cook, stirring constantly, for 2 additional minutes.

  4. Brown ground beef with oregano and salt until no longer pink, 8 to 10 minutes.

  5. Add crushed tomatoes, beef broth, cayenne pepper, and a bay leaf.

  6. Bring to a boil, then reduce heat to medium-low and simmer, partially covered, for about 1.5 hours.

  7. Stir in pinto beans, crushing some to thicken, and season with additional salt and cayenne.

  8. Simmer uncovered for 10 to 15 minutes.
