Spicy German Mustard

Instructions

  1. Combine mustard seed and dry mustard in a medium bowl.

  2. In a saucepan, combine remaining ingredients and simmer uncovered over medium heat for 10 to 15 minutes, until reduced by half.

  3. Pour the reduced mixture into the bowl with the mustard seeds. Cover and let stand at room temperature for 24 hours, adding vinegar as needed to keep seeds covered.

  4. Process the mixture in a blender or food processor for 3 to 4 minutes to achieve your desired texture.

  5. Transfer the mustard to clean, dry jars. Cover tightly and refrigerate for at least one day (preferably three) for flavors to meld and thicken, adding vinegar if it becomes too thick.
