Instructions

  1. Melt butter in a heavy saucepan over medium-low heat.

  2. Sauté chopped shrimp and sliced green onions for 1 minute, stirring constantly.

  3. Stir in flour and 1 teaspoon Creole seasoning, cooking for 1 minute while stirring.

  4. Gradually add half-and-half or milk, reduce heat to low, and cook until thickened.

  5. Remove from heat, then stir in hot sauce, salt, and additional Creole seasoning to taste.
