Spicy Chorizo Sausage and Potato Chowder
A rich and delicious slow cooker chowder features spicy chorizo sausage, potatoes, corn, cream of chicken soup, and Boursin cheese.

Brown crumbled chorizo, with casings removed, and onions in a skillet over medium heat until the sausage is cooked and onions are lightly browned.

In a slow cooker, combine chicken broth, diced potatoes, cream of chicken soup, parsley, Boursin or cream cheese, the cooked chorizo and onions, and corn. Stir all ingredients thoroughly.

Cover and cook on low for 5 to 7 hours, stirring occasionally, until the potatoes are tender.
