Instructions

  1. Preheat the oven to 375 F.

  2. In a 10-inch skillet, heat olive oil over medium. Sauté onion, celery, green pepper, and garlic for 5-6 minutes until tender. Stir in salt, peppers, cumin, Worcestershire, and Tabasco.

  3. Remove skillet from heat and cool for 15 minutes.

  4. Transfer cooled vegetables to a bowl. Mix in milk, ketchup, eggs, and breadcrumbs. Add ground beef and pork, combining until just mixed.

  5. Press meat mixture into a greased 9x5-inch loaf pan, smoothing the top.

  6. Combine salsa and tomato paste; spread over the meatloaf.

  7. Bake uncovered at 375 F for 50-55 minutes, or until internal temperature reaches 160 F.

  8. Drain excess fat.

  9. Cover and let stand for 10-15 minutes.

  10. Remove from pan, transfer to a platter, and slice.
