Spicy Bacon Eggs Benedict Recipe

Instructions

  1. Start boiling water in a pot for poaching eggs.

  2. Prepare hollandaise: Melt butter. In an immersion blender cup, combine egg yolk, lemon juice, and water. Blend while slowly adding the melted butter until smooth. Whisk in hot sauce and salt; keep warm.

  3. Poach eggs: Create a swirl in the boiling water, then carefully drop an egg into the center. Cook for approximately 1.5 minutes until whites are set. Remove with a slotted spoon, drain, and keep warm. Repeat for the second egg.

  4. Assemble: Place cut bacon on toasted English muffin halves. Top each with a poached egg, spoon hollandaise sauce over, and sprinkle with chives.

  5. Optionally add hot sauce.
