Instructions

  1. Preheat oven to 375 F (190 C) and line muffin cups.

  2. In a large bowl, combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

  3. In a separate bowl, mix pumpkin, melted butter, milk (or half-and-half), brown and granulated sugars, beaten eggs, and vanilla until blended.

  4. Stir the wet pumpkin mixture into the dry ingredients until just moistened, folding in optional pecans or raisins; do not overmix.

  5. Fill muffin cups 3/4 full, sprinkle with cinnamon sugar if desired, and bake for 20-25 minutes.

  6. Serve muffins warm or at room temperature.
