Spiced Pumpkin Butter Muffins

Instructions

Preheat oven to 325° and prepare muffin pans.

In a large bowl, combine sugar, flour, soda, baking powder, salt, nutmeg, and 1 1/2 tsp cinnamon.

In a small bowl, whisk eggs, pumpkin butter, canola oil, milk or half-and-half, and vanilla; add to dry ingredients, mix until blended, then fold in 3/4 cup chopped pecans.

Fill muffin cups 2/3 full. Combine 1/4 cup pecans, 1/2 tsp cinnamon, and 1/4 cup brown sugar; sprinkle on muffins.

Bake for approximately 30 minutes, until muffins spring back when lightly touched.
