Spiced Lamb Stew

Instructions

  1. Trim and cube lamb, then season with salt and pepper and toss with flour.

  2. Heat 1 tablespoon oil in a Dutch oven over medium heat. Add floured lamb and chopped onion; cook, stirring frequently, until lamb is browned and onion is translucent.

  3. Stir in garlic for 1 minute.

  4. Add all remaining ingredients and bring the mixture to a boil.

  5. Reduce heat, cover, and simmer for about 1 hour until lamb is tender.

  6. Serve hot over rice, grits, polenta, couscous, or with buttered noodles or potatoes.
