Spiced Apple Oatmeal Cake

Instructions

  1. Preheat oven to 350 F and grease and flour a 10-inch tube cake pan.

  2. Finely chop peeled and cored apples; then, simmer them in a saucepan with water and 1/2 cup brown sugar for 5 minutes until tender, then cool.

  3. Lightly beat eggs in a small bowl.

  4. In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, oats, raisins, and chopped pecans.

  5. Add the cooled apple mixture, beaten eggs, remaining brown sugar, and oil or shortening to the dry ingredients; beat until just moist.

  6. Spoon batter into the prepared pan and spread evenly.

  7. Bake for 40 minutes, or until a toothpick comes out clean.

  8. Cool on a rack for 10 minutes, then invert to cool completely.

  9. Serve sliced cake, optionally dusted with confectioners' sugar or drizzled with icing.
