Simmer 6 tablespoons balsamic vinegar, 1 juiced lemon, and 1 halved garlic clove in a small saucepan over medium-low heat until reduced by half; set aside.

Slice tuna fillets into steaks if needed. Combine 1.5 teaspoons kosher salt, 1 teaspoon ground coriander, 1 teaspoon paprika, and 0.25 teaspoon cayenne pepper. Season all sides of the tuna steaks with this blend, then coat with 1.5 teaspoons black pepper, pressing it onto the surface.

Heat 2 tablespoons vegetable oil in a thick frying pan over medium-high heat until smoking. Sear tuna steaks for about 1 minute per side, or until desired doneness.
