Instructions

  1. Simmer 6 tablespoons balsamic vinegar, 1 juiced lemon, and 1 halved garlic clove in a small saucepan over medium-low heat until reduced by half; set aside.

  2. Slice tuna fillets into steaks if needed. Combine 1.5 teaspoons kosher salt, 1 teaspoon ground coriander, 1 teaspoon paprika, and 0.25 teaspoon cayenne pepper. Season all sides of the tuna steaks with this blend, then coat with 1.5 teaspoons black pepper, pressing it onto the surface.

  3. Heat 2 tablespoons vegetable oil in a thick frying pan over medium-high heat until smoking. Sear tuna steaks for about 1 minute per side, or until desired doneness.

  4. Remove tuna, slice each steak diagonally, and fan on plates. Drizzle with the balsamic reduction and garnish with a lemon wedge.
