Spekulatius (German Spice Cookies) Recipe

Instructions

  1. Preheat the oven to 350 F.

  2. Cream granulated and vanilla sugars with butter in a large bowl. Beat in eggs individually. Whisk together flour, baker's ammonia or baking powder, salt, cinnamon, cloves, and cardamom; stir into the creamed mixture to form a stiff dough. Form the dough into a ball, cover, and refrigerate for at least 2 hours, or overnight.

  3. Oil and flour a spekulatius mold, removing excess. Roll dough into an egg shape, press into the mold, and trim excess. Release the cookie by tapping the mold or using a knife, then place on a cookie sheet. Repeat for all dough. Alternatively, roll dough 1/8 inch thick and cut with cookie cutters.

  4. Bake for 10 to 12 minutes, until edges slightly brown. Serve cookies.
