Spekulatius (German Spice Cookies) Recipe
These crisp, thin German spice cookies, related to Dutch spekulaas, are infused with festive Christmas flavors, making them ideal for holiday celebrations.

Preheat the oven to 350 F.

Cream granulated and vanilla sugars with butter in a large bowl. Beat in eggs individually. Whisk together flour, baker's ammonia or baking powder, salt, cinnamon, cloves, and cardamom; stir into the creamed mixture to form a stiff dough. Form the dough into a ball, cover, and refrigerate for at least 2 hours, or overnight.

Oil and flour a spekulatius mold, removing excess. Roll dough into an egg shape, press into the mold, and trim excess. Release the cookie by tapping the mold or using a knife, then place on a cookie sheet. Repeat for all dough. Alternatively, roll dough 1/8 inch thick and cut with cookie cutters.

Bake for 10 to 12 minutes, until edges slightly brown. Serve cookies.
