Speculoos (Windmill Cookies) Recipe

Instructions

  1. Preheat the oven to 347 F (175 C) and prepare baking sheets by greasing or lining with parchment paper.

  2. In a large bowl, mix flour, raw cane sugar, butter, milk, spice, baking soda, and zest until a non-sticky dough ball forms.

  3. Cover the dough ball with plastic wrap and let it rest at room temperature for one hour.

  4. Lightly flour a surface and roll the dough to 1/4-inch thickness.

  5. Cut the dough into shapes with a cookie cutter and place them on the prepared baking sheets.

  6. Brush the cookies with egg white, then sprinkle with brown sugar and flaked almonds.

  7. Bake for 10 to 25 minutes, or until the almonds caramelize and the cookies are golden brown.

  8. Cool on the pans for a few minutes, then transfer to a rack to cool completely.
