Sparkling Borage Cocktail

Instructions

  1. To make borage syrup, combine 1 cup water and 1 cup sugar in a saucepan; stir over medium heat until dissolved and slowly boiling.

  2. Add 1/2 cup borage leaves and flowers, then stir.

  3. Reduce heat, cover, and simmer for 15 minutes.

  4. Remove from heat, steep for one hour, then strain the borage and refrigerate the syrup.

  5. For borage flower ice cubes, fill trays halfway with distilled water and freeze.

  6. Place one borage flower on each half-frozen cube, fill trays with more water, and freeze until solid.

  7. In a shaker, combine gin, elderflower liqueur, borage syrup, lime juice, and ice.

  8. Shake well, then strain into a chilled cocktail glass.

  9. Add borage flower ice cubes and top with club soda.
