Spanish Style Fried Anchovies

Instructions

  1. Heat 1/2-inch of olive oil in a medium frying pan over medium heat.

  2. Clean anchovies by removing heads and innards, then rinse, pat dry, and keep chilled.

  3. Combine flour with 2 teaspoons of salt on a plate.

  4. Roll anchovies individually in the flour mixture until fully coated.

  5. Fry coated anchovies in batches for about 1 minute per side until golden.

  6. Transfer fried anchovies to paper towels, season with additional salt if desired, and serve with lemon wedges and baguette.
