Instructions

  1. Finely chop onion and garlic; cut pepper into 1/4-inch pieces.

  2. Heat olive oil in a large, heavy-bottomed frying pan over medium heat.

  3. Add onions and sauté until transparent, reducing heat as needed.

  4. Stir in green pepper and cook for 5 minutes, adding more oil if needed.

  5. Add garlic and sauté for 1 minute.

  6. Stir in crushed tomatoes and paprika.

  7. Cook for 10-15 minutes, until tomato liquid evaporates and sofrito thickens.
