Instructions

  1. Start boiling water in a large saucepan.

  2. Add rice to the boiling water, reduce heat to medium-low, and simmer for 10 minutes; then turn off heat and let rice sit.

  3. In a separate large saucepan, combine milk and sugar over medium-low heat; stir until sugar dissolves.

  4. Increase heat to medium and bring milk to a boil.

  5. Drain the cooked rice.

  6. Once the milk boils, add the drained rice, butter, cinnamon stick, and lemon peel; gently boil for 15 to 20 minutes until the rice softens.

  7. Remove the cinnamon stick and lemon peel.

  8. Remove from heat and transfer the pudding to a serving dish.

  9. Sprinkle with ground cinnamon.

  10. Let cool for 15 minutes before serving warm; for cold serving, cool for 20 minutes, then refrigerate for at least 1 hour.
