Instructions

  1. Preheat the oven to 350 F.

  2. Peel and thinly slice potatoes and onion.

  3. Cut bacon or pancetta into strips; lightly fry, then remove and drain on paper towels.

  4. Oil a 9x12-inch baking dish, then layer potatoes, onions, and bacon until all ingredients are used.

  5. Whisk eggs and milk together (add nutmeg if desired), then pour the mixture over the layered potatoes.

  6. Cover the dish with aluminum foil and bake for 40 minutes.

  7. Remove foil, sprinkle grated cheese over the top, and return to the oven uncovered for another 5 to 10 minutes, or until the cheese is golden brown.

  8. Garnish with fresh thyme if desired, then cut into squares and serve.
