Spanish Potato Salad - Ensalada Rusa

A classic Spanish potato salad, also known as ensalada Rusa, is a popular side dish or tapa across Spain.

Instructions

  1. Start boiling water in a large pot for potatoes and eggs.

  2. Scrub the potatoes and boil them whole until firm, simultaneously boiling eggs until hard, then cool both.

  3. Drain the potatoes, cool in cold water, then peel and cut into 1/2-inch cubes, refrigerating them afterwards.

  4. In a bowl, combine 1 1/2 cups mayonnaise, diced roasted pepper, thoroughly drained flaked tuna, drained carrots and peas, and one chopped egg; mix well.

  5. Add the mayonnaise mixture to the chilled potatoes and mix thoroughly, adding more mayonnaise if desired.

  6. Smooth the top of the salad, spread a thin layer of mayonnaise over it, and decorate with sliced red pepper, drained white asparagus, olives, and sliced hard-boiled eggs.
