Spanish Patatas Bravas
Patatas bravas, a popular Spanish tapa, can be quickly prepared at home with a few simple ingredients.

Instructions

Heat 1-inch deep olive oil in a wide, deep frying pan over medium-high heat until hot.

Peel and cut potatoes into 1/3 to 1/4 inch chunks, then sprinkle with salt.

Fry the salted potato chunks in the hot oil for approximately 10 minutes, until golden brown.

Using a slotted spoon, remove the fried potatoes and drain them on paper towels.

In a separate small frying pan, heat 1-2 tablespoons of olive oil over medium heat.

Add tomato sauce to the small pan and sauté for 5 minutes.

Reduce heat, then stir in mustard, Tabasco, paprika, and vinegar.

Taste and adjust the sauce as needed.

Arrange the fried potatoes on a serving dish and pour the prepared sauce over them.

Serve warm.
