Spanish Patatas Bravas

Instructions

  1. Heat 1-inch deep olive oil in a wide, deep frying pan over medium-high heat until hot.

  2. Peel and cut potatoes into 1/3 to 1/4 inch chunks, then sprinkle with salt.

  3. Fry the salted potato chunks in the hot oil for approximately 10 minutes, until golden brown.

  4. Using a slotted spoon, remove the fried potatoes and drain them on paper towels.

  5. In a separate small frying pan, heat 1-2 tablespoons of olive oil over medium heat.

  6. Add tomato sauce to the small pan and sauté for 5 minutes.

  7. Reduce heat, then stir in mustard, Tabasco, paprika, and vinegar.

  8. Taste and adjust the sauce as needed.

  9. Arrange the fried potatoes on a serving dish and pour the prepared sauce over them.

  10. Serve warm.
