Spanish Pasta With Chorizo and Tomatoes

Instructions

  1. Start boiling water for pasta in a large pot.

  2. Peel and chop the onion and garlic; seed and dice the pepper.

  3. Remove chorizo casing and slice into 1/4-inch rounds.

  4. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion, garlic, pepper, and chorizo, adding more oil if needed.

  5. Once onions are translucent (about 5 minutes), add crushed tomatoes and paprika. Simmer on medium-low for 10 minutes, stirring occasionally.

  6. Add salt to the boiling pasta water, cook pasta until al dente, then drain.

  7. Season the finished sauce to taste with salt.

  8. Serve pasta topped with sauce, adding shaved cheese if desired.
