Instructions

  1. Heat oil in a heavy frying pan over medium heat, then add garlic.

  2. Before the garlic browns, add cubed ham and bread slices, sautéing for a few minutes.

  3. Stir in sweet paprika, water, and salt; bring to a slow boil, then simmer for 10 to 15 minutes.

  4. Carefully crack eggs one at a time into the simmering soup; cover and cook without stirring for 3 to 5 minutes.

  5. Transfer poached eggs to soup bowls, then ladle the soup over them and garnish with fresh parsley.
