Spanish Chorizo and Peppers (Pimientos y Chorizo Frito)

Instructions

  1. Rinse, deseed, and slice green and yellow peppers lengthwise into 1/3-inch strips.

  2. Peel and finely chop garlic, then cut chorizo into 1-inch lengths.

  3. Heat 4 to 5 tablespoons olive oil in a heavy-bottomed frying pan.

  4. Fry chorizo and pepper strips, stirring frequently, until peppers brown and soften.

  5. Add chopped garlic and continue frying for about one minute, stirring often.

  6. Serve the cooked chorizo and peppers on a platter with rustic bread.
