Spanish Chorizo and Peppers (Pimientos y Chorizo Frito)

Rinse, deseed, and slice green and yellow peppers lengthwise into 1/3-inch strips.

Peel and finely chop garlic, then cut chorizo into 1-inch lengths.

Heat 4 to 5 tablespoons olive oil in a heavy-bottomed frying pan.

Fry chorizo and pepper strips, stirring frequently, until peppers brown and soften.

Add chopped garlic and continue frying for about one minute, stirring often.
