Spanish Chicken With Tomato Sofrito Sauce

Instructions

  1. Chop onion and bell pepper, mince garlic, and slice mushrooms.

  2. Heat half the olive oil in a large pan over medium heat. Sauté the chopped vegetables and garlic for 7 minutes until the onion is translucent.

  3. Stir in crushed tomatoes and bay leaves. Simmer on medium-low heat for 10 minutes, adding water if the sauce becomes too thick.

  4. In a separate pan, heat the remaining olive oil over medium heat.

  5. Season dried chicken breasts with salt and pepper.

  6. Pan-fry chicken for 10 minutes, turning twice, until browned.

  7. Remove chicken, slice 1/2-inch thick, and add to the tomato sauce.

  8. Stir to coat, cover, and cook on low heat for 10 minutes. Adjust seasoning.
