Spanish Chicken Noodle Soup (Sopa de Pollo con Fideos)

Heat a large skillet over medium heat. Sauté olive oil, garlic, celery, carrots, and onion for 2 minutes, stirring.

Add chicken backs and brown for 2 to 3 minutes.

Pour in water and add bay leaves. Simmer for 1 to 1 1/2 hours, seasoning with salt to taste.

Remove chicken, separate skin and bones, then return the meat to the soup. Stir in oregano.
