Spanish Chicken Noodle Soup (Sopa de Pollo con Fideos)

Instructions

  1. Heat a large skillet over medium heat. Sauté olive oil, garlic, celery, carrots, and onion for 2 minutes, stirring.

  2. Add chicken backs and brown for 2 to 3 minutes.

  3. Pour in water and add bay leaves. Simmer for 1 to 1 1/2 hours, seasoning with salt to taste.

  4. Remove chicken, separate skin and bones, then return the meat to the soup. Stir in oregano.

  5. Bring soup to a rapid boil. Add dry noodles, broken in half, and cook until done.

  6. Serve hot.
