Spanish Chicken in Orange Sauce

Instructions

  1. Season chicken breasts with salt and pepper.

  2. Heat olive oil in a large frying pan. Fry chicken for approximately 15 minutes, browning both sides, then remove and set aside.

  3. Dice carrots and onion. Add them to the same frying pan and sauté until the onion is browned.

  4. Pour in orange juice, lemon juice, and white wine. Simmer for a few minutes to reduce and concentrate the sauce flavors.

  5. Puree the sauce in a blender or food processor, or leave chunky if preferred. Return the sauce to the frying pan.

  6. Season the sauce with salt and pepper to taste.

  7. Return the chicken to the pan with the sauce. Cover and simmer for 20 to 30 minutes, or until chicken reaches an internal temperature of 165 F.

  8. Serve chicken with the sauce spooned over and garnish with orange slices.
