Spanish Carnival Pancake Recipe

Instructions

  1. Separate egg whites into a large bowl and beat them to stiff peaks.

  2. While beating, gradually incorporate sugar, yolks, flour, anise liqueur, milk, and lemon peel; let the batter rest for 5 minutes.

  3. Heat olive or vegetable oil to a 1/2-inch depth in a frying pan over medium-high heat.

  4. Ladle small portions of batter into the hot oil, frying until golden on both sides, then remove and drain on paper towels.

  5. Serve immediately, drizzling with warm honey; optionally, infuse the honey with a cinnamon stick or sprinkle with ground cinnamon.
