Spanish Carnival Pancake Recipe

Instructions

Separate egg whites into a large bowl and beat them to stiff peaks.

While beating, gradually incorporate sugar, yolks, flour, anise liqueur, milk, and lemon peel; let the batter rest for 5 minutes.

Heat olive or vegetable oil to a 1/2-inch depth in a frying pan over medium-high heat.

Ladle small portions of batter into the hot oil, frying until golden on both sides, then remove and drain on paper towels.

Serve immediately, drizzling with warm honey; optionally, infuse the honey with a cinnamon stick or sprinkle with ground cinnamon.
