Spanish Calamari Rice (Arroz con Calamares) Recipe

Instructions

  1. Heat fish stock in a saucepan, ensuring it does not boil.

  2. Clean squid, cut into rings, and remove the eye from tentacles. Peel and finely chop onion and garlic, then cut pepper into small pieces.

  3. Meanwhile, heat olive oil in a large frying pan. Sauté onion and garlic until golden, then add red pepper and sauté for 5 minutes.

  4. Add squid to the onion mixture and sauté for 3-4 minutes. Stir in rice, coating it with oil, and toast for 2 minutes over medium heat.

  5. Pour in the heated fish stock and saffron, then stir. Season with salt and pepper. Simmer until rice is cooked, adding optional peas after cooking.

  6. For a 'soupy' rice, add more fish stock just before the rice finishes cooking.

  7. Remove from heat and serve.
