Spam Fried Rice Recipe
A quick fried rice combines crispy Spam and assorted vegetables, perfect for utilizing leftovers in under 30 minutes.

Instructions

Heat 1 tablespoon oil in a pan over medium-high heat.

Sauté Spam cubes until golden brown, then remove from pan, leaving oil.

Add remaining oil and butter to the pan.

Cook beaten eggs, constantly scraping, until done.

Sauté scallion whites and minced garlic until softened.

Add peas, carrots, and rice; toss and sauté until lightly fried.

Stir in rice vinegar and cook for 2 more minutes.

Stir in soy sauce and brown sugar, cook 1-2 minutes, then return Spam to the pan.

Serve immediately, topped with chopped peanuts and scallion greens.
